Raspberry Chia Pudding with Ginger Nut Cream

Amazing delicious healthy chia pudding with raspberries and Ginger nut cream...insanely good!
Ingredients
Chia Pudding
- 2 cups frozen raspberries (or choice of berries, organic where possible)
- ¾ cup organic raisins (1/4 cup seperated and soaked)
- 1 cup Water
- ½ cup chia seeds
Ginger Nut Cream
- 1 cup raw cashews (soaked in filtered water overnight)
- 1 cup water
- ½ cup organic coconut oil
- 3 tablespoons organic maple syrup (or natural sweetener of your choice)
- 2cm piece of fresh ginger (or to taste)
Instructions
Chia pudding
- Place chia seeds in a bowl
- Place frozen berries in a blender
- Add water and ½ cup raisins (leaving the soaked raisins for later)
- Blend on high speed until well mixed
- Add berry mix to bowl with chia seeds and stir until well mixed
- Let stand for 20 minutes stirring occasionally until it thickens
- Add the drained soaked raisins and stir in well
Ginger Nut Cream
- Drain and rinse soaked cashews and place in blender
- Add all other ingredients
- Blend on high speed until well mixed and creamy
- Place in jar or container with lid and let set in fridge.
For serving
You can either serve chia in a bowl with cream on top, or
add layers of chia and cream in a glass, or bowl and top with nutmeg
