Raspberry Chia Pudding with Ginger Nut Cream

Amazing delicious healthy chia pudding with raspberries and Ginger nut cream...insanely good!
Ingredients
Chia Pudding
  • 2 cups frozen raspberries (or choice of berries, organic where possible)
  • ¾ cup organic raisins (1/4 cup seperated and soaked)
  • 1 cup Water
  • ½ cup chia seeds
Ginger Nut Cream
  • 1 cup raw cashews (soaked in filtered water overnight)
  • 1 cup water
  • ½ cup organic coconut oil
  • 3 tablespoons organic maple syrup (or natural sweetener of your choice)
  • 2cm piece of fresh ginger (or to taste)
Instructions
Chia pudding
  1. Place chia seeds in a bowl
  2. Place frozen berries in a blender
  3. Add water and ½ cup raisins (leaving the soaked raisins for later)
  4. Blend on high speed until well mixed
  5. Add berry mix to bowl with chia seeds and stir until well mixed
  6. Let stand for 20 minutes stirring occasionally until it thickens
  7. Add the drained soaked raisins and stir in well
Ginger Nut Cream
  1. Drain and rinse soaked cashews and place in blender
  2. Add all other ingredients
  3. Blend on high speed until well mixed and creamy
  4. Place in jar or container with lid and let set in fridge.
For serving
You can either serve chia in a bowl with cream on top, or
add layers of chia and cream in a glass, or bowl and top with nutmeg
