Sprouted Bean Salad & Spicy Satay Dressing

A delicious refreshing healthy salad dressed with a lovely spicy satay dressing. This salad would compliment any meal.
Ingredients
Salad
- 2 cups baby spinach
- 1 cup bean sprouts
- 10 snow peas thinly sliced
- 1 cucumber cut in ½ and thinly sliced
- 1 capsicum thinly sliced
- 1 red onion cut in half and thinly sliced
- ½ firm large avocado diced
Spicy Satay Dressing
- ½ cup raw almond butter (you can make your own with raw almonds blended in a high speed blender)
- ¼ cup water
- 2 Tablespoons lemon juice
- 2 tablespoons fresh peeled and chopped ginger
- 2 tablespoons maple syrup
- 2 tablespoons tamari (a gluten-free soy sauce)
- 2 tablespoons olive oil
- 1 large or 2 small garlic cloves
- 1 teaspoon dried chilli or chilli flakes
Instructions
Salad
- Place all ingredients in a large bowl and toss to mix through. Cover and place in fridge until dressing is made.
Spicy Satay Dressing
- Place all ingredients in a high speed blender and blend until well mixed and creamy. You can adjust the thickness by adding more water if you prefer a thinner mix.
- Add ½ cup of dressing to salad mix and mix through gently until or salad is coated. You may want to add more or less, so start off with a small amount and increase to gain the depth of flavour on the salad that you like….enjoy!
You will have enough mixture left over to use as a dipping sauce for rice paper rolls or veggie rolls etc
