Biting into one of these amazing energy balls, you get a refreshing full flavour hit of delicious lemon, macadamia nut and coconut...very healthy and filling.
Ingredients
1 cup Macadamia
¾ cup shredded organic coconut
¼ cup organic sunflower seeds
8 plump organic pitted medjool dates
2 tablespoons ground organic flaxseeds (linseeds)
1 tablespoon nut butter (I use cashew and toasted coconut)
1 or 2 tablespoons lemon juice
Rind of 1 lemon
pinch of salt (Himalayan)
Instructions
Place all ingredient in a food processor and process till sticky.
You may need to add a tablespoon of water
Roll into balls and store in the refrigerator
You can also roll in a little coconut and finely grated lemon rind for an extra lemon flavour
