Lemon Macadamia Nut Energy Balls

Biting into one of these amazing energy balls, you get a refreshing full flavour hit of delicious lemon, macadamia nut and coconut...very healthy and filling.
Ingredients
  • 1 cup Macadamia
  • ¾ cup shredded organic coconut
  • ¼ cup organic sunflower seeds
  • 8 plump organic pitted medjool dates
  • 2 tablespoons ground organic flaxseeds (linseeds)
  • 1 tablespoon nut butter (I use cashew and toasted coconut)
  • 1 or 2 tablespoons lemon juice
  • Rind of 1 lemon
  • pinch of salt (Himalayan)
Instructions
  1. Place all ingredient in a food processor and process till sticky.
  2. You may need to add a tablespoon of water
  3. Roll into balls and store in the refrigerator
  4. You can also roll in a little coconut and finely grated lemon rind for an extra lemon flavour
