A delicious slice that tastes just like coconut rough chocolate and can also be used for tartlet bases.
Ingredients
1 cup raw (natural) organic brazil nuts
1 cup raw (natural) organic almonds
1 cup organic shredded coconut
⅓ cup sesame seeds
½ cup organic cold pressed coconut oil (melted)
⅓ cup organic raw cacao
3 tablespoons coconut nectar (or honey)
¼ teaspoon vanilla power
Small amount of water
Instructions
Place all ingredients into food processor and process on high until nuts are finally chopped and mixture is well combined.
While food processor is running, add a small amount of water (1 - 2 tablespoons) and pulse a few times until mixture sticks together. You do not want too much water as it will become too smooth and sticky.
Line a tray with sides with baking paper (similar to a lamington tray). Spread mixture into the tray to ½cm thick and press tightly down using the back of a spoon.
Place in freezer to set.
Once set, cut into slices (size of your choice) and store in freezer
Note: you can also press mixture into flexible paddy moulds to create small tart bases and set in freezer. When mixture is solid, invert tartlet bases to remove tart bases from moulds and store in freezer. when ready to use, Fill with filling of choice. Extremely delicious with jaffa mousse, topped with ginger nut cream...
