A delicious silky creamy chocolate pudding....not only tastes good, but also highly nutritious!
Ingredients
⅓ cup chia seeds (I use white seeds, but black or mixed are fine)
270 ml coconut cream ( I use Ayam as it is the only one I can find that is 100% coconut kernel)
1 cup nut milk - almond or brazil or your choice of nut milk (add more for a thinner pudding)
3 tablespoons honey
2 tablespoons raw cocao
Instructions
Place all ingredients except the chia seeds in a blender and blend on high until well mixed and creamy.
Place mixture in a bowl and stir in the chia seeds. You will need to mix the chia in well, then place mixture in the fridge.
As the pudding starts to set, stir again to mix chia evenly through the pudding. This will set quite firmly due to the coconut cream and the thickening of the chia.
If you feel you would prefer a less firm pudding, then stir in more nut milk. Add some mango to serve or fruit of choice...and enjoy the lovely silky texture and delicious chocolate flavour....
