Mango Macadamia Slice

Delicious desert....no Gluten, Dairy or processed sugar
Ingredients
  • 2 cups macadamia nuts
  • 8 medjool dates
  • water if needed
Filling
  • 3 cups fresh ripe diced mango
  • 4 slices of dried mango (chopped)
  • 1½ cups soaked cashews (soaked overnight)
  • ¼ cup honey
  • 2 tablespoons lemon juice
  • ⅓ cup coconut oil
Instructions
Base
  1. place macadamia nuts and dates in food processor and pulse until broken down and combined. You may need to add a small amount of water (2 tablespoons) to get the mixture sticky. Do not over-process as it will be too soft and sticky as it is much nicer to have some texture in the base. Line an 8" pan with baking paper and press the mixture into the pan, smooth off with back of spoon to get the mixture evenly layered in the pan. Place in freezer while you make the filling.
Filling:
  1. Place all ingredients in high speed blender and blend until smooth and creamy.
  2. Take base out of freezer and spread filling over base and place back in freezer.
  3. When the slice is set you can cut ready to be served and place back in container in freezer.
  4. When ready to serve take out of freezer 10 minutes prior to serving and serve with a fresh slice of mango on top and sprinkle over raw crushed macadamia nuts.
  5. If you would like to use as ice cream, don't make the base, just place mixture in a container in freezer...tastes just like a mango Weise bar!
